Yields 10 servings

To make the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Drink (yields 850ml, enough for 10)

400ml good quality vodka

150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, for garnish

For the Citrus Syrup: Combine the listed ingredients into a pan, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the heat and let it to cool fully. Transfer into a clean bottle, seal keeping it in the refrigerator, it will last for up to one month.

For the Batch Mix: Mix all the liquids in a large bottle, allow it to infuse for 60 minutes, then strain preferably using muslin, so it's completely strained.

When ready to serve: Pour 85ml from the cocktail base into your stirring glass packed with ice, and stir gently for about 60 seconds to cool it down. Pour to a frosted cocktail glass or a similar vessel, decorate with some cranberries adding the final touch by giving it a light spray of the essential oil over the drink.
